Moroccan Honey

Honey is a natural, healthy, uncontaminated, easily digestible and very energetic product.

Honey in Morocco is a precious commodity.


They are of different floral origin (almond, milflores, forest, thyme, captus, etc).
Its production can be both traditional and modern:

- Modern:
Something curious in its modern production is its nomadic character, to take advantage of different blooms that the country offers.
Hives usually winter in low places and near the coast, from February, the hives return to the great Atlas, to take advantage of early flowering almond.


Hive movements are made by placing a sponge in the entrance to prevent the mass exodus of bees, the loading and unloading is done by hand.

- Tradicional:
In the traditional way there are two types of rustic hives, the first installed in clay pots and the second in mud walls.

Thay are usually located in the gardens of rural homes or Kasbas.
The bees also build their nests in long cylinders made of reeds – these are then packed in clay or whatever else you can lay your hands on, and the ends blocked (then carefully removed for harvesting).

Honey is a key component of Moroccan pastry. 
It is a natural preservative. 
The conservative effect of honey is due to its low concentration of water and is identical to that required for the prolonged preservation of sweets and fruit in syrup where the high sugar content decreases the water content.

Medicinal purposes
Honey is the remedy par excellence in Islam, considered a useful remedy in almostall human diseases, at least in the physical or bodily disease.
Its traditional use is as a remedy, both curative and preventive.
The consumption of honey is beneficial at any age with certain doubts about babiesunder 12 months at that age, with current knowledge, it is preferable to avoid it.
For now, honey, is the only product of the hive that is sold in Morocco.

In rural areas, we can find whole combs, full of honey and bee bread, from rustic hives.


The the traditional beekeeping sector, usually sells his honey at markets and traditional souks where the containers are so common and affordable, inexpensive,reusable water bottles.
The modern sector also sells honey in the markets, but does it in less extent. 
There are many beekeepers that pack and label their honey. They are sold in stores "undertile. " 
We can also find sellers of honey for many roads in the country, they usually sell it in bottles of 2 to 5 kilos.

It is remarkable that the traditional is still stronger
than the modern, as the honey obtained by traditional methods, it is always sold at a price higher than that obtainedin modern hives.

On the road from Agadir to Essaouira there are several fantastic beaches. My favorite...

Imsouane

A surfers paradise this coastal town has a traditional fishing harbor. In the association of fishermen, near the port, we can enjoy the spectacle of the meeting between fishermen and buyers. And a large variety of fish with great price.

There are several hostels and a hotel with bar and restaurant. We can also eat in the bars situated near the coast.

The beaches are huge and crystal clear water with good weather invite to the total relaxation.

Welcome to the wonderful world of ceramics in Morocco, where there are real artists specialized in all types of crafts. Years of experience and a great deal of patience make the artisans in Morocco stand out as being able to produce all kinds of materials with different and authentic beauty.




This time we visit a pottery workshop on the outskirts of Agadir.
Wonderful world of clay where anything can be possible if it goes through experienced hands ..

Pumpkin Maassel

1°) Cut up the pumpkin into small pieces and put it with the water in a pot to average fire.
Leave it 30 minutes into the covered pot, until it begins to fall apart.

We remove occasionally in order that it does not stick to the pot.
2°) Once the pumpkin is done, we uncover the pot and put the cinnamon in branches and the cinnamon in powder.
We continue to average fire and remove with very much love and patience...
...until the water evaporates. This needs enough time, put music and enjoy the moment.
“The grandmother secret: The Maassel brightness is obtained putting sunflower oil during the evaporation process.”
3°) When the water is evaporated we put the sugar into the pot.

In this moment, the pumpkin will liberate the liquid that it contains. We keep on removing until the water has totally evaporated, until it has a texture of jam.

To know if the water has evaporated completely, we separate the mixture with the spade of wood, as you can see in the picture. If we see that there is no liquid, then the Maassel is ready.

4°)Once finished we can decorate it with sesame. It’s very important that the water is completely evaporated. This will increase the shelf life of the Maassel. One or two weeks in the frigo.

Sunny day on December 2010

It seems like 2010 wants to say us "bye, bye" with a big smail.


Today, 10th december 2010, we've got a nice winter day.
30°C and almost 32°C, have surprised to every one here in the Timoulay hotel.




The hotel is full. :)
We got plenty of people who comes to Agadir to visit Sifel trade show and others fleeing the cold.
The Christmas decoration is ready & every one is getting ready for the New year.
At the evening we 've got a lovely sunset, we said bye to the sun and this wonderful day and...

...hello moon!

...Maroccan dinner time! ;)
